In Chinese and Jewish movies I'm guessing they do speak Chinese and Yiddish lol.

As for English speaking films, I'd say that demons are associated in our culture with Christianity, which developed under the yoke of the Roman Empire (which spoke ancient Latin). So when a movie wants to invoke that "ancient evil" feel, hearing Latin harkens back to the days of early Christianity.

No, it doesn't make any logical sense, but then again, since when do movies make any sense in general? Don't forget that Gozer the Gozerian was Summerian!

Why not Chines or yitish? wtf?;)

I guess the reason is it sounds evil. Latin and Chinese both old languages. However latin has more relevence in our history to the story of demons. Any middle eastern faith always had demons within the story's , so the population would obey the rules of there faith. It is a classic good vs evil scenario.
